Cooking with Kitty: Spinach and Lentil Burgers with Sweet Potato Fries, Griddled Courgettes and Halloumi.
So yeah this is a style blog- but actually this is a LIFESTYLE blog. Ever since I started this I have occasionally put up food pieces. Every time I instagram, Facebook or tweet my cooking I am asked for recipes so here is where you will find them every now and then! Enjoy!
What you will need;
Good Life Spinach and Lentil Grill’s
One large Sweet Potato
One Courgette
Olive Oil
Balsamic Vinegar
Rock Salt
Black Pepper
Paprika
Cinnamon
Gluten Free Buns (Or non gluten free if you prefer)
Halloumi
Thyme
A Griddle Pan
An Oven
Baking Paper or Foil
Mayonnaise
Honey BBQ Sauce (optional)
A Large Sharp Knife
A Vegetable Peeler
A Mug
Salad (I like rocket, radicchio or spinach leaves)
Okay so here’s a cheat – I bought Spinach and Lentil burgers by ‘Good Life’ these aren’t home made.
But I made a whole load of good food to accompany them. I picked up the burgers from a local organic store, they are vegan and basically gluten free although they don’t state it. They don’t have any gluten ingredients in them.
I bought gluten free buns from Tesco’s but you can get normal bread buns if your prefer.
First of all prepare the sweet potato by peeling it. Then cut it on half, half again and so on until you get chip like sized pieces.
Put some baking paper on a tray and cover with a little olive oil just so the whole tray is lightly covered but not soaking. Put this in the oven at about 200 degrees to warm up for a few minutes.
Get your mug and put a generous amount of olive oil, salt, cinnamon, black pepper and paprika in filling about one third of the mug and stir. Put your sweet potato fries into a bowl and cover with this mixture then take out the warm tray and place the fries onto it.
Leave cooking for about 10 minutes then get another tray cover with baking paper and put the burgers on.
After another 10 minutes:
Slice the courgette fairly thick vertically. Put a little olive oil in the griddle and bring it to the heat. Add your courgettes then top with a little thyme, a touch of balsamic vinegar and sprinkle with rock salt.
Turn over after a few minutes to make sure they cool evenly on both sides. Then take out and place in a covered bowl while you cook your halloumi.
Cut your halloumi into think slices, your griddle is already hot at this point so they will cook very quickly.
Note:
Pop your bread buns in the bottom of your oven at this point.
Turn your hallmoumi quickly and carefully to make sure it cooks nice and evenly. This will only take a couple of minutes!
Turn off the griddle and remove from the head.
Take everything else out of the oven.
Cut your buns in half, I like to add honey BBQ sauce to the bottom and mayonnaise on top and stack the burger, courgettes, hallmoumi and then salad in between!
Serve the fries on the side with a touch of rock salt.
And there you go! A tasty veggie burger meal!
