Food: Gluten Free Banana and Choc Chip Muffins
1 3/4 Cup Rice Flour
¼ Cup Corn Flour
2 Tsp Baking Powder
1 Pinch Sea Salt
¾ Cup Sugar
2 Large Eggs (Organic preferably)
½ Cup Soy Milk
2 Ripe Bananas
1 bag chocolate chips
Chopped nuts (as much as you desire, I go for a large handful)
Heat the oven to 180 Deg C. Line the muffin tins with paper liners.
In a mixing bowl mix all the dry ingredients and in another mix all the wet ingredients. Then slowly mix in the dry ingredients in to the wet. Once that is a nice consistency mix in the banana, chocolate chips and chopped nuts
Fill the liners about ¾ of the way through and bake for about 20-25 minutes or until a skewer comes out clean when inserted into the middle and they are slightly firm. I don’t mind if they are a little soft as this keeps them softer for longer once they have cooled.
Leave to cool and then enjoy!
